History
Château Moulin de Clotte dates back from 1890 as it is testified by the well rock lined on the Château west facade. As usual in Bordeaux, the winery name comes from the name of the locality called « La Clotte » and its old windmill of which there is only the millstone left. The domain is made of vines, ponds and copses. It overlooks a vineyard of 8 hectares in appellation Castillon Côtes de Bordeaux. The terroir is clay on calciferous molasses and has 85 % of Merlot, 10 % of Cabernet Franc and 5 % of Malbec.
The appellation Castillon Côtes de bordeaux is ideally located a few kilometers from Saint-Émilion in the village of Les Salles De Castillon. Vines traces in this region dates back to the Antiquity, but the real flight of this vineyard occurred in the middle ages under the British occupancy of the Aquitain region. Wines from Castillon were shipped by boat to Northern Europe. The AOC appeared only in 1935.
Like in our other vineyards, our top priority is to look for the best match between the different terroir and their grape variety. We have chosen to restructure the vineyards by proceeding to some uprooting, followed by some rest of the soils, and then by planting different cereals depending on their deficiencies. The plots are finally replanted after 3 years. Density have been risen in the new plantation in order to ensure a better maturity no matter the vintage.

Vendanges - Mechanical harvest
Vinification - Each plot is vinified separately in order to respect the characteristics of the terroir. After the alcoholic fermentation we carry out a post-fermentation maceration at 28°C, during a period of approximately 15 days, to extract the fruit and obtain a wine of a good structure while keeping roundness. After malolactic fermentation, the wine is aged in vats for 18 months.
Elevage - 80% in tank and 20% in wood
